You can make the server mount when the user logs in.
Make sure you turn off the option in iTunes to copy music into your
local iTunes folder first.
I don't use this method anymore but I did for a while when my
workstation computer had a relatively small HD and the server had a
big drive. I do have a couple of computers with small HDs still but
I use iTunes Sharing for them (they aren't used for loading iPods or
burning CDs though).
